Sorbet, Ice cream and Granita: Some Recipes

The summer doesn’t want to end and there is no better way than a cool sorbet, granita or a creamy ice cream.
So here are some tasty recipes to cool the hottest days.

Recipes:

Tomato sorbet with Ricotta and honey

Ingredients: water, tomatoes, ricotta, sugar, honey, toasted pine nuts.

METHOD:
Put the water and the sugar in a pot and cook them at 95 ° C for 5 minutes.
Add the chopped tomatoes and let stand for about 6 minutes.
Stir the mixture well for further 5 minutes and then let it cool.
Mix again for about 3 minutes.

Once cold, try to stir the mixture constantly and gently to provide a smooth texture.

Whip the ricotta with honey.

Put the sorbet into a glass and then garnish with whipped ricotta and honey; add the toasted pine nuts to taste.

Kiwi sorbet

Ingredients: water, kiwi pulp, sucrose, dehydrated glucose syrup, lemon juice.

METHOD:
Put the water with sugar, dextrose and glucose syrup in a pot and cook them at 65 ° C for about 2 minutes.
Then let the mixture cool.
Add the chopped kiwi and lemon juice and put it into the refrigerator.
The last step is to constantly and gently stir the mixture to get a smooth texture.

Once a perfect creaminess is reached, serve the kiwi sorbet in a glass.

Apricot sorbet

Ingredients: water, apricot pulp, dextrose, sucrose, inulin, lemon juice.

METHOD:
Put the water with sugar, dextrose and glucose syrup in a pot and cook them at 65 ° C for about 2 minutes.
Let the mixture cool and then add the chopped apricots and lemon juice.

The last step is to constantly and gently mix the mixture to get a smooth texture.

White chocolate and basil ice cream

Ingredients: white chocolate, stabilizer, inverted sugar, dextrose, powdered milk, fresh milk.

METHOD:
Put the stabilizer, inverted sugar, dextrose, powdered milk and fresh milk in a pot.
Cook the mixture at 85 ° C for a few  minutes.
Cool the mixture at 4 ° C.
Add basil and leave to infuse for at least 12 hours in the refrigerator.
Add the white melted chocolate and stir for a minute.

Now pour the mixture into your ice cream machine and follow its instructions.

Spiced coffee ice cream

Ingredients: cream, fresh milk, powdered milk , sucrose, dextrose, glucose syrup, stabilizer, espresso coffee, cloves, cinnamon, vanilla.

METHOD:
Flavor the cream with the spices for 12 hours in the refrigerator and then filter the mixture with a strainer.
Cook the cream with fresh milk, powdered milk, sucrose, dextrose, glucose syrup at 82 ° C for a few minutes.
Cool the mixture at 4 ° C and then add the coffee.
The mixture has to stay in the refrigerator for at least 12 hours.

Now pour the mixture into your ice cream machine and follow the instructions.


Tangerine granita

Ingredients: water, tangerine juice, sugar.

METHOD:
Pour the water into a pot and boil it; then add the sugar.
When the sugar is completely melted and the liquid is clear, turn off the heat and let the syrup cool.
Squeeze the tangerines to extract the juice and filter it with a strainer.
Add the juice to the syrup previously obtained and mix it.
Put the tangerine granita in the refrigerator and after half an hour, stir again and vigorously to break up ice crystals.
Repeat it every half an hour for two or three times, until you get the desired result.
